I've recently read a book called 'The Pillars of the Earth' by Ken Follet and learned a great deal more about Catholicism. I just want to know when and where did Christianity start creating Saints?

Saints (with a lowercase except at the beginning of a sentence) was the term early Christians called each other. Christians were called saints until about the 4th century when Christian became a popular derogatory term outsiders used. The saints then took over the name and made it into something good for them.
As far as Saints (with a capital S) the term was originally used for Martyrs. It is used to refer to someone whom the Catholic church believes is in Heaven already instead of waiting for judgment. Nowadays you don't have to be a martyr to be canonized.
From the dictionary definition below, you will see that the word has a wide range and the English word came from Latin. But basically a saint was a revered Holy or righteous person. Thus the original Apostles and their successors were regarded as such by the early believed and this righteousness term was transferred or translated into Latin in the Roman provinces. As they started to get heaps and heaps of Saints, the Church start to be selective of who they called saints and register them.
But as one of the answerer already said, In God's eyes. all Believers in Christ are already saints now, whether recognized officially by this or that church!

The term has been used to denote believers in the Holy God of Israel at least since we were given the book of Deuteronomy. The Catholics tried to change the meaning with their own teachings, but I really do not know when. Like the old song says, 'A saint is just a sinner who fell down and got up.' God bless you.
It came with the creation of the Church. The purpose and goal of the Church is to create saints.
I would be careful learning about Catholicism from fictional writings.

The word saint is derived from the greek word "agios" which means Holy one.....in essence any one who is saved is holy...Holy actually means seperated from or out of....all saved Christians are saints!
Jewish tradition ... it's in the Torah.
